These easy breakfast Bacon Egg and Cheese Quesadillas are perfect for weekdays or weekends!
This past Sunday I was in the mood for a big breakfast. I wanted eggs and bacon, but I had picked up some fresh flour tortillas earlier in the week…and I wanted to use those too. These bacon egg and cheese quesadillas are so easy to make, and they are a delicious option for a bacon and egg breakfast!
My family loves quesadillas. They are a go-to meal — I make them pretty regularly for lunch, and sometimes for dinner too! Chicken, cheese, steak…even spinach…but I’d never tried them for breakfast!
I prefer scrambled eggs over other ways of preparing eggs, so I used scrambled eggs in my quesadillas. I also used pre-shredded cheese, although you could definitely also shred your preferred cheese.
And I cooked my bacon very crispy. I know of three different ways of cooking bacon – on the stove, in the oven, and in the microwave. My favorite way to get very crispy bacon is to cook it in the microwave. I have a special tray that I cook it on, and it always cooks the bacon perfectly crisp.
I used fresh flour tortillas which I cooked first and then used for quesadillas. I would probably stick with flour tortillas in this recipe, as I’m not sure how the flavor of a corn tortilla would work with the bacon, egg, and cheese combination. So easy to make, and delicious!
