These easy baked chicken empanadas are a delicious light lunch or dinner, and they are also a perfect snack!
Chicken empanadas were the very first thing I tried on my inaugural visit to Paraguay, at the beloved Lido Bar restaurant in Asuncion. Wonderfully compact and packed with flavor, empanadas are one of my most favorite South American foods. Many of my husband’s family members make these in lots of different ways- sometimes fried, sometimes baked, sometimes with different kinds of fillings. For this one, I went with an easy baked chicken empanada recipe. I created a simple cooked chicken filling, and I also added a few more vegetables, olives and even some raisins. Rather than fry them, I went with baking – a healthier, and very tasty alternative. The filling stays juicy and flavorful, and baking creates a crunchy crust that perfectly compliments the chicken.
This version of chicken empanadas is the perfect handheld snack, and they are great for lunch, dinner, and even leftovers for breakfast. I served them with a side salad for a nutritious and light dinner. Chicken empanadas also freeze well, and are easy to defrost and reheat for leftover lunches and dinners. I hope you like them!
