Soup is one of my fall weeknight favorites, and this tasty and easy Beef and Cabbage Soup is delicious!
Well, between some yucky tropical weather…and an even yuckier cold this past week, I have been away from the blog for a bit. But y’all I’m back now and ready for fall kitchen creations. Bring on the pumpkin people – I’ve got some recipes to make! And to make fall cooking that much more fun, the weather reports are saying we’ve got cooler air on the way for the next fews. Yay! With this most recent hurricane, and all the rain we’ve had…I can’t wait for a little change in the season. In the spirit of fall, I’ve got this awesome, hearty, and really easy Beef and Cabbage soup for you guys. I LOVE this soup. Totally easy for weeknight dinners, and perfect for a chilly fall day.
One of the best things about this soup, aside from the fact that it is incredibly easy to make, is that you’ll likely have leftovers too! I happen to love the taste of cabbage, and adding a bit of cabbage with tomato and ground beef is an awesome, savory combination.
You can make this soup to whatever consistency you like, and as it cooks the soup will thicken. You can add water if you like a thinner soup, or you can keep it thicker if you prefer.
I also garnish the soup with chopped fresh basil, and it adds such a tasty flavor. I let the soup simmer for about 45 minutes to an hour so that they flavors combine. Add a bit of crusty French bread, and this is a perfect weeknight dinner!
