A tasty, cold Marinated Shrimp Salad is a delicious and light summer appetizer – perfect for a cookout!
I LOVE the taste of fresh Gulf Shrimp. Growing up, shrimp was part of our regular holiday fare. And I mean EVERY holiday. At every barbecue, every shower, every brunch, every family dinner…someone always brought shrimp-something. It might have been a casserole, or a salad, or just simple boiled shrimp. Maybe it was gumbo, or even crispy fried. But I could always count on juicy and delicious Gulf shrimp hand-in-hand with lots of family. So as I was thinking over what I wanted to bring to our family 4th of July Barbecue this weekend, this marinated shrimp salad came to mind.
This recipe is one of those that my mom passed along to me years ago, and it is definitely a long-time family favorite. I’m actually not sure who or where it came from, but this little salad is one of my very favorite ways to enjoy shrimp. Granted, it takes a bit of time to cool off in the refrigerator once it’s mixed up. But it’s really an easy and delicious starter or side dish that’s perfect for any family gathering. It’s wonderful by itself, or it could also go on a bed of lettuce or with crackers.
