In between-ness. That’s this period of time between Thanksgiving and Christmas. We’re sitting back in our recliners, watching football seasons wrap up, with full bellies and happy hearts. Thanksgiving is in the rear view, and our sights are set on Christmas up ahead. For us self-professed foodies and kitchen lovers, it’s an awesome time of year. I love holiday cooking – love the baking, love the special recipes and treats that are only on the table this time of year. And I love the fact that food and family are so interconnected. It’s a time full of expectations and excitement, busy schedules, lots of lists, and plenty of holiday cooking plans. And that’s honestly how this recipe for One Pot Cheesy Chicken Enchiladas was born. I’m smack dab in the in between-ness…in between the big family holiday meals, and in between juggling my kids’ busy schedules, in between planning travel and making sure all the to-do’s get done before Christmas. These enchiladas are so perfect for all the busy evenings during this season – an easy dinner in between the holiday to-do’s and get-togethers that doesn’t zap your energy.
Got your skillet ready?
I am partial to my iron skillet…so I ended up making these up and baking them right in the skillet. But if you’re short an iron (or oven-safe) skillet, a baking dish will work too (it will just add a pan).
One of the reasons this recipe is so easy and tasty is the RO*TEL and Hunt’s tomatoes that I added to the filling. On my last trip to Wal-Mart, I picked up a can of Mild RO*TEL Diced Tomatoes and Green Chilies and a can of Hunt’s Fire Roasted Garlic Diced Tomatoes. And yes…that fire roasted garlic flavor is just as delicious as you are imagining right now 🙂
Once you’ve got all your ingredients ready…it’s just a matter of making up the filling, then filling up the tortillas, and baking til’ done. And talk about tasty! The savory tomatoes, the chicken, tortillas, and cheese are a wonderful and easy weeknight dinner…perfect after a busy day of wrapping gifts, planning big dinner menus, and organizing schedules.
