I can’t begin to describe how perfect these easy Cheesecake cupcakes are for a delicious dessert. Sinfully creamy, perfectly sweet (but not too sweet), AND they are less than 250 calories per cupcake! Cheesecake has a very special place in my food heart, and it also happens to be my father-in-law’s favorite dessert. Since we were celebrating Father’s Day with lunch at a local restaurant, I made these cupcakes for him…rather than a whole cake. Easier to bring, and easy to eat.
These cupcakes were inspired by my traditional cheesecake recipe, which I’m sure will end up on the blog at some point. Passed down to me from my mom, the original recipe is a little time-consuming (i.e. needs overnight refrigeration), but it is so worth it. And with my lower calorie, sans crust modifications, these cupcakes are a true treat. I’m thinking of making them for our Fourth of July Barbecue! They are perfectly dressed up for any occasion, and they would be adorable with some festive cupcake liners and toppings. Fellow Cheesecake lovers…. it’s hard to eat just one 🙂 I hope you enjoy!
