I was at my local market last week, and can I just tell you how incredibly happy I was when I saw that ALL the berries were on SALE! Woo-hoo! After loading my basket with probably a ridiculous amount to most, I got home with them, ate some, sliced some for snacks, froze some…and sat back in pure happiness with berry treasures. If y’all can’t already tell, I love summertime, and I LOVE summer berries. They’re an awesome snack. And they go really well in summer desserts like this super easy Summer Berry Trifle. My mom has been making a version of this trifle for many years. Inspired by the holiday weekend approaching, I dusted off my trifle dishes to make this super easy treat!
The red, white, and blue colors of this dessert really make it a lovely choice for summer gatherings. And you can make it in small trifle bowls like these, or one large trifle bowl. My mom typically does one big one for a dessert at summer parties.
Either way, I love how easy it is to make. It’s one of those recipes that you can make up in just a few minutes, and it’s always such a hit at patriotic holiday celebrations.
You can use any pound cake you like for the bottom layer. For this one, I actually picked up a ready-made pound cake from the store. But in the past I’ve used homemade pound cake, (like my Almond Pound Cake) and it also tasted wonderful.
I also made my own whipped cream with sugar, vanilla, and whipping cream, but you can also use store-bought whipped cream if you’re running short on time. You can also use any kind of available summer berries – I always try to use red and blue for patriotic holiday parties.
Have a wonderful Independence day weekend! And hope you enjoy this yummy treat as much as my family does!
